WINEMAKER'S NOTES:
A blend of the native Catalan varieties Garnacha and Monastrell, given a very short maceration for a pale pink hue and some fine berry aromas. Dry and crisp, with no dosage added. Indigenous yeasts, no fining. In Catalan, the name AZIMUT means the line between the sun (energy) and the sea (calm).
Azimut is a project by the Suriol family, longtime organic growers in Penedès, Spain. Their Brut Nature Rosé blends Garnacha and Monastrell, crafted with native yeasts and zero dosage. It’s dry and lively, with bright red berries and a savory edge. A pure expression of traditional Cava made with minimal intervention.
