WINEMAKER'S NOTES:
A ruby color of gentle intensity, with subtle purple highlights, it has an intoxicating and vinous nose that releases hints of black cherry and raspberry, with subtler sensations of licorice root and new leather emerging: truly delightful and distinctive! The palate is pleasantly lean, supported by a very fine tannic structure, still a touch pungent: the bitterness is captivating, emerging progressively and focusing on slightly lingering notes on the finish. All this makes for a juicy and crisp drink, fresh and persistent.
It excels with mushroom pasta and white meats, perfect with lasagna with ragù. Another pairing is with pasta and beans. After a short bottle aging, it also pairs well with roast and boiled poultry. For those who enjoy red wines with fish, if served very young and chilled (14°C), it pairs well with the sensations offered by fatty lake fish: risotto with tench and grilled eel. Tradition dictates that it be paired with one of the most typical Venetian dishes: polenta and stockfish (baccalà). For a slightly more unusual pairing, it can be enjoyed with couscous, whether vegetable, fish, or meat.
