The 2023 San Simeon Cabernet Sauvignon from Paso Robles is a medium to full-bodied wine with aromas of dark fruit, baking spices, and herbs, and flavors of blackberry, plum, and cocoa. It is a blend of about 80% Cabernet Sauvignon and 20% Petit Verdot, aged in both French and American oak barrels, and is noted for its juicy character, ripe tannins, and long finish. It is considered a "rock-solid" vintage with good aging potential, described as a well-balanced, ripe, and smooth wine.
