WINEMAKER'S NOTES:
Primarily Cabernet Sauvignon. Deep ruby-purple color. Aromas of blackcurrant, blackberry, black cherry, and violets, followed by vanilla, cedar, mocha, and baking spice. Subtle hints of dried blackberry and cocoa emerge with air. The palate is full-bodied and concentrated, showing ripe black fruit, dark chocolate, espresso, and warm oak spice. Tannins are medium-plus to high, fine-grained and chalky, with medium to medium-plus acidity giving lift. Rich texture, intense flavor, and a long, persistent finish of cassis, cocoa, and sweet spice. A classic, structured, and plush Calistoga Cabernet.
Food Pairing: Grilled ribeye with rosemary and garlic, braised short ribs, beef bourguignon, espresso-rubbed lamb chops, aged cheddar, gouda, blue cheese, portobello mushroom burgers with caramelized onions, dark chocolate with sea salt
TASTING NOTES:
An impressive Cabernet that celebrates the region by bringing together succulent dark fruits with a bright wash of acidity and an enticing integration of aromatic woods, baking spice and cocoa powder. The tannins persist while being powder fine allowing the option to age or enjoy now.
