WINEMAKER'S NOTES:
At Gekkeikan, we constantly strive to innovate and push the boundaries of sake – to explore the potential of what this beverage can be, while also being responsible in our use of resources. We reduced the rice-polishing ratio from 60% to 70% to be more sustainable in our use of rice and water, and also to ensure that the delicious flavor of the rice is manifested in every glass. Haiku is also pasteurized only once in the namazume way. The result is a juicy, refreshing Tokubetsu Junmai that delivers big punches of sweet and tangy fruit flavors.
Rich, juicy aromas of ripe pear, freshly cut pineapple, apple and muscat grape on the nose.
A big dose of pineapple opens up the palate, giving way to apple, pear, and mango. Bold acidity follows and cleans up the palate, revealing hazelnut-like umami.
A surprisingly dry, clean finish for such a juicy sake. Refreshing umami, and lingering sweetness. Best served well chilled.
