Larry Mawby crafts his non-vintage Talisman Brut as a field blend. It is fashioned from Chardonnay, Vignoles (a hybrid), Pinot Noir and Pinot Gris. Located in the Talisman Vineyard on Michigan's Leelanau Peninsula, the four different varietals are harvested and vinified together. One third of the resulting wine is added to a Solera, composed of Mawby's previous vintages of Talisman. One third of this Solera blend is then added to the new vintage's wine. From then on it is produced using similar methods to Champagne producers. The sample tasted for this report listed 1380 bottles having been made (each release lists a different number of bottles). It offers attractive, creamy, almond aromas, as well as an elegant, delicate, focused, dry personality. Yeast, toast, and some intricate spice flavors can be found in this extremely well-crafted, refined, sparkling wine.

Very tasty. Toast, herb, ginger and citrus aromas and flavors are tightly bound into the elegant frame in this light-bodied bubbly. Long, smoky finish.

A blend of vignoles, pinot noir, pinot gris, and chardonnay grapes that are hand picked and carefully whole - cluster pressed. The juice is fermented in stainless steel and blended with reserve wines in a solera kept in oak, then fermented a second time in this bottle and aged en tirage before degorgement.
