WINEMAKER'S NOTES:
The Brut Noir is typically composed of 45% pinot meunier, 40% chardonnay and 15% pinot noir collected from 20 different organically farmed plots spread across the communes of Courmas, Bouilly, Merfy, Chenay and Saint-Lumier-en-Champagne. The wine is fermented and aged in stainless for 6-8 months before it is blended with 40% reserve wine and aged en tirage for 4-5 years.
TASTING NOTES:
The NV But Noir is a blend of 45% Pinot Meunier, 40% Chardonnay and 15% Pinot Noir, based on 2018 with 40% of reserve wines. Reductive flint rises promisingly to reveal shy apple tart notions. The palate has bright, brisk mousse on a very streamlined, Pinot-focused body, still with that reductive smokiness. Direction and drive imbue this with a lot of energy and real freshness. Perfect Pinot-driven apero. Dosage is 8gr/L.
