By the end of harvest, Monte Bello is split into 55 different blocks, which are then picked and fermented separately. Year after year, this is a “wow” wine, herbal, lightly spiced in oak, with a lovely creamy, velvety texture and a backbone of well-resolved tannin supporting a medium-bodied, balanced spirit of mountain garrigue. The wine was fully destemmed and only pumped over half as often as a typical vintage for Montebello. Its a tightly wound iteration in its youth with 100% new American oak for 20 months. Expressive on the nose, with taut black fruits, fresh pine needles and mineral notes of wet clay and roasted herbs. The palate is fresh and medium weight, (13.8%abv) with so much lively freshness in its youthful exuberance. Salty ocean notes open the palate chasing taut eary season blackberries and plum skins. Welcome rain in mid-August came at just the right time to save the harvest, and production ended up being slightly higher than in 2020. Around eight to 10 separate vinifications were made, fermented in stainless steel with indigenous yeasts and spontaneous malo. The wines were racked to second- and third-use barriques in December 2021, then racked into a mixture of new and used barriques in March 2022. The last step was to make the final blend in stainless tanks, where the wine underwent micro-oxygenation before bottling and further maturation in bottle. Rich dark fruit and herb aromatics are pockmarked by blueberry and petrichor, leading into an intense and vertical palate that's super-fresh with a delightful breezy, saline character. Around eight to 10 separate vinifications were made, fermented in stainless steel with indigenous yeasts and spontaneous malo. The wines were racked to second- and third-use barriques in December 2021, then racked into a mixture of new and used barriques in March 2022. The last step was to make the final blend in stainless tanks, where the wine underwent micro-oxygenation before bottling and further maturation in bottle. The fifth edition produced entirely from organically farmed and certified fruit, and heavily based on Pinot Noir, the 2016 represents the contemporary quality of Cristal, combining the concentration of 2002 with the precision and cut of 2013. Disgorged in July 2024 with a dosage of seven grams per liter, it opens in the glass to reveal a bouquet of lemon zest, white flowers and peeled almond, framed by youthful reduction. On the palate, it is bright and electric, with a pure core of fruit, pinpoint mousse and a textural attack, concluding with a long, saline finish.
